Quinoa

We have understood quinoa, a so-called pseudo-grain, is a (nearly) complete source of protein as well a source of minerals including calcium. It appears that the protein composition of the food is comparable with that of milk, hence our first suggestion would be that quinoa is an excellent base for plant milk.

Today most plant milk is made of soy or rice, though using quinoa will provide a greater variation in base ingredients. This is important since many meat substitutes are made of soy, and the consumption of too much soy might result in health issues. For meat substitutes lupin could be used instead of soy.

Plant-based alternatives for dairy products are important for several reasons. First keeping large animals such as cattle will be an enormous drain on resources in space settlements. Secondly substituting dairy with plant-based alternative will lead to reduction in animal suffering.
